When my husband and I first started dating he worked at this really fancy high end restaurant. One of their deserts they served was Molten Lava Cakes. I will admit these were simply divine and when my husband found the box at the grocery store to make them we made them almost every week for a few months! They really were that good! So tonight in a scramble to figure out what I was going to serve our guests before watching The Walking Dead (yup we are hooked just like the rest of America) I was also trying to figure out what recipe I wanted to post for you all. Now I make tons of deserts but most are complicated and I throw them together without measurements. Pulling a recipe for them out of thin air was not good enough for me. My husband insisted on Italian Cream Cake but as stated before explaining that one would be difficult, at the moment. My next choice was Spice Cake which hubby shot down claiming he did not like it (unsure where he has tried it before). So I decided to stick to the basics.. Brownies. My husband being the complex man he is insisted on fudge filled brownies a lot like the Molten Lave Cakes. I decided, why not! After all I already shot him down on the Italian Cream. Thus my Gooey Fudge Filled Brownies were born! These are very chocolate-y dangerously delicious! Be sure to have ice cream and/or milk on standby!
Ingredients: 1/2 Cup (1 Stick) Melted Butter 1 1/2 Cups Sugar 1 Tsp Vanilla Extract 2 Large Eggs 3/4 Cup Flour (I am Gluten intolerant so I used Pamela's Artisan Flour Blend) 1/2 Cup Unsweetened Cocoa Powder 1/4 Tsp Salt 1/4 Tsp Baking Soda 1 Tbsp Chocolate Milk (Optional) 1/4 Cup Hershey's Hot Fudge Syrup |
1. Preheat Oven to 350 degrees F.
2. Grease an 8x8 square baking pan with cooking spray (I used coconut oil spray).
3. In your mixer combine melted butter, sugar, and vanilla mixing until smooth.
4. In a separate bowl sift flour, cocoa powder, salt and baking soda.
5. Add eggs to your mixing bowl, with the sugar mixture, one at a time mixing well between additions.
6. Add flour mixture in 2-3 additions mixing until smooth and well incorporated each time. After adding the flour you can mix in the chocolate milk if you decide to use it. I used it because gluten free flour tends to make food more dry so I try to add things to help moisten it up. If you are using regular flour you may not even need the milk.
7. Pour batter into your prepared baking dish.
8. Heat the Hershey's Hot Fudge syrup in the microwave for 10 seconds, just to soften. Taking a clean spoon dig holes into your batter. Add your hot fudge syrup to each hole and cover back up with the batter you removed. You can also try dropping spoonfuls on top of the batter and taking a tooth pick or knife and swirling it in with the batter. I choose the holes due to wanting the fudge to run out when cut.
9. Bake in oven for 30-35 minutes until sides pull away from the pan. (My oven took 30 minutes in my dark stone baking dish).
10. Let cool, serve and enjoy! I topped mine with confectioners sugar just to balance out the chocolate but you can also serve with a scoop of ice cream (hubby eats it like this) and/or whipped cream! ENJOY!
**Remember the hot fudge in your mixture will make your batter seem gooey still if you insert a tooth pick and it doesn't come back clean.**
